“Every dish is elevated thanks to the distinct flavours that each ingredient offers. I’ve been to numerous restaurants that tout “sky-dining” and “skyline views”, but many a time, the food served pales in comparison to the views. Sitting at the pinnacle of Swissôtel The Stamford, however, I was so focused on the food I barely looked up from my plate.” -AugustMan.com

It’s easy to lose track of which bar is which amidst the slew of hotel bars in Singapore. Not so for Cook & Brew, which stands out from the rest with its vast selection of craft beers, mouthwatering nosh, and tasteful aesthetic (think dark red leather bar stools and a black marble-topped bar). The food isn’t any run of the mill finger food; rather, take your pick from a range of skilfully-cooked local and international delights that will be sure to impress even the most discerning palate.
Kick start your meal with bar bites including Pad Thai Fries, a delicious combination of sweet potato fries tossed in a heady mix of pad thai sauce and freshly squeezed lime, adorned with chicken, prawns, crushed peanuts and dried sakura shrimps, and Whipped Buffalo Milk Ricotta, Truffle Honey and Grilled Bread – whipped to create a delicate texture and sweetened with truffle honey to complement the crusty grilled sourdough, and Poutine “EH”, french fries doused with a generous serving of five different kinds of cheeses, pulled pork and Magner’s cider gravy, are still available, alongside a selection of craft beers. For something a little closer to home, try the Hawker Burger, a decadent creation comprising char siew-styled pork jowl, crispy pork belly, and sambal mayonnaise for a combination that works. Other must-try dishes include the Maple Miso Cod and BBQ Beef Ribs – for dessert, you definitely can’t go wrong with the decadent Chocolate Hazelnut Crunch Cake.
It’s hard not to have a wonderful time at Cook & Brew, with its quality eats and tipples (don’t forget to make use of the beer pairing suggestions for your dish). Don’t just take our word for it though - head down sometime soon for an exquisite dining experience you won’t forget! (Sep 2018)
When you have Stellar at 1-Altitude's views, you could be dining in a cardboard box and you wouldn't notice. Perched on the 62nd floor of One Raffles Place, it's difficult not to appreciate the unparalleled views of our favourite city. Nonetheless, Stellar stays consistent with its theme of elevated dining with clean lines, crystalline accents and a cafe au lait palette.
The open kitchen is certainly not a novel concept, but with cathedral-height ceilings, this one seems more expansive than most. The dedication to perfection in each culinary art is impressive - sea-fresh oysters and other sustainable produce, house-cured charcuterie, and a melange of desserts are on rotation on the thoughtfully curated, seasonal menu by acclaimed Chef Christopher Millar and astounding pastry chef, Jasmin Chew.
Currently on offer is the Constellations Gastronomic Menu, at once both exquisite and approachable. Choose between 6 or 8 courses, or go for a more selective approach with the vegetarian option. Taste of Loch Fyne, Twice Baked Gruyere Soufflé, Otoro Risotto with Pancetta and Hazelnuts - these plates sound inviting and when presented, pleasantly surprise with their depth and creativity. The grand finale comes in the form of an actual dessert art performance by the pastry chef, tableside.
Keep in mind that Stellar was one of the select few restaurants to be a Krug Ambassade and in 2017 became the first in Singapore to join vintage champagne house Dom Pérignon in embarking on the Ultimate Dom Pérignon Experience (Dom Pérignon Plénitudes Ultimate Experience).
This tight rope performance between delicious familiarity and unforeseen innovation is what Stellar at 1-Altitude is known for, and why it stands above the rest in terms of fine dining institutions in Singapore. (Jan 2018)
