    Bon vivants will be irresistibly drawn to this cosy lounge in the NCO Club, where you’ll find a private reserve of vintage New World wines from US and Australian wineries Stags’ Leap, Penfolds and Beaulieu Vineyard. Love a rich mouthfeel for your Chardonnay? Stag Leap’s wide variety of grapes harvested from their location at the base of the hill reflects the strength of their terroir, from creamy Chardonnays to powerful Petit Syrahs. Fans of dry reds will make a beeline for the extensive selection from Penfolds. You’ll also recognise the Australian winery’s iconic Penfolds Grange on the menu here. For wines steeped in history, the Beaulieu Vineyard is one of the few wineries to survive the Prohibition era, and wield a huge influence over the winemaking in the Napa Valley region today, For nibbles, there’s creamy Brillat Savarin with cranberries and truffle honey, as well as deeply savoury iberico bellota.     Fabien Duboueix, Head Sommelier

    Pursuing his career in the wine and hospitality industry across Europe, the UK, the US and now Singapore, Fabien brings with him a wealth of over 17 years of experience in the food and beverage industry.

    Truly passionate in his work, Fabien has built on his skills during the course of his career, the multi-hyphenate is a certified Sommelier (CMS), Specialist of Wine (CSW), Spirit Specialist and Sake Sommelier. In 2014, Fabien added another professional title to his belt, becoming an Advanced Sommelier from the Court of Master Sommelier, making him one of the very few sommeliers in this part of the world to have achieved such an advanced accreditation.

    Prior to The NCO Club, Fabien was Head Sommelier at Joel Robuchon le Restaurant at Resorts World Sentosa. He was also known for his service in restaurants including 1-Michelin-star Lucknam Park in Colerne, England and the 1-Michelin-star El Castell de Ciutat in Seo D'urgell, Spain.

    Fluent in English, Spanish and German apart from his native French, Fabien is keen on helping other wine professionals progress their career through consistent skills upgrading, like he has done.

    Fabien is currently the Head Sommelier of The NCO Club's culinary anchor Madame Fan. With his vast knowledge in wines, he works in consultation with the Stags Leap and Penfolds to curate the wine list and manage the team at Stags' Room, an intimate and lush wine room.
