    Description

    Taiwanese chef André Chiang makes a triumphant return to Singapore with a new hotpot concept, Bon Broth.

    At Bon Broth, the broth is the star of every meal. Diners can enjoy individual hotpots, each made from scratch upon ordering. The broth is crafted with the precision of a fine French sauce, starting with a fresh, aromatic mirepoix base that is gently sautéed and infused with Chef André Chiang's signature spice paste. This mixture is then deglazed with a classic French-style bouillon, made daily from pure fish, beef, pork, or chicken bones. The process takes 12 to 16 hours, resulting in a rich, nourishing broth brimming with marrow and collagen. Fresh herbs, aromatic spices, and condiments further enhance the broth before serving.

    Unlike traditional hotpots, where flavours deepen over time, each broth at Bon Broth is carefully crafted to be savoured from the first sip. Chef André Chiang's vision is simple yet profound: to return to the basics of crafting a pure, balanced broth that is rich and complete on its own. He certainly delivered. (Feb 2025)
