Chef Yew Eng Tong, a born and bred Singaporean, was the opening chef of Ocean restaurant at Resorts World Sentosa, where he worked closely with American celebrity chef, Cat Cora, on the launch of the farm-to-table inspired menu in 2013.
A chef who strongly believes that there are no shortcuts to building the foundation of cooking, he always credits his time spent working with 3-Michelin star Chef Christian Bau (Victor’s Dining) as a turning point in his culinary life. He has always been part of Bau’s Asian team for his four-hands pop-ups in this part of the world, most recently at Michelin starred Noi @ Four Seasons Hotel Hong Kong.
Yew was also the team captain who led the Singapore National Culinary Team at the Culinary Olympics 2014 to clinch the championship in Germany. Familiar with representing Singapore internationally in culinary competitions, he was also the Singapore representative at the Bocuse d’Or competition from 2013 – 2017. At the Asia selection of Bocuse d’Or 2012 in Shanghai, he took the number one position, beating other Southeast Asian countries such as Japan. He was also an invited guest chef at James Beard gala dinner in New York (2016) and the Engelhorn Gourmet Festival in Mannheim, Germany (2016 and 2019).
Yew’s vision for Alma by Juan Amador is to apply his years of deep-diving into competition culinary techniques to the menu to bring an elevated gastronomic experience for the diner. “It has always been my personal desire to apply the cooking techniques I’ve learnt and perfected during my course of culinary competitions to my dishes in the restaurant. However, it’s not always been possible, as this takes time, effort and is an investment. At Alma by Juan Amador, I have found the team and support that can work towards this goal,” he shared.
