    Description

    Swish, sexy, sophisticated, but at the heart of it, deeply soul-nourishing. That’s the promise here at Nouri, helmed by Chef-Owner Ivan Brehm and pulled together by the indefatigable Unlisted Collective. The beautiful glass-walled interiors, done up with marbled flooring, and an alluring dark blue, from an interesting cross between rustic soulfulness and urbane chic, which is perfect because the menu here serves up what the chef calls “crossroads cooking”. More than just fusion fare, the food here also aims to be surprising, teasing out unexpected all kinds of unexpected connections.

    Take their starter of Silken Cheese, a cheeky suggestion of tofu that gives way to panna cotta like mouthfuls of spiced savoury cheese, served up with crisp, complex sourdough bread. The sweaty, vibrant streets of Brazil are conjured up by a deep-fried snack called Acaraje, an homage to a Brazilian street-food classic, that’s a crispy fritter of pinto bean given a familiar kiss with its pairing of a turmeric and coconut curry that’s actually Brazilian in origin, but a close cousin to Southeast Asian flavours. Then, there’s Nduja, a spin on an Eastern European sausage platter, here given a distinct Korean twist with kimchi and Wagyu beef, playing off the strong flavours of the European original.

    More substantial plates come in the form of signatures like the Black Pepper Fish, locally farmed grouper in a vibrant sauce of black pepper and vanilla, dressed up with cashew, Chinese mustard, and charred pickled carrot.

    These delicate, brain-tickling plates are paired with stunning wines, many of them organic and biodynamic in origin for a truly unique taste profile. Small bites with big flavour and lots of playful, intelligent touches, this is a thinking man’s restaurant, but make sure to bring your appetite! (Jun 2017)
