Kakushin, which means ‘innovation´ in Japanese, is anchored by an Omakase concept that is guided by a singular philosophy – to illuminate the best of seasonal produce from Japan with imaginative storytelling and inspired exploration.
Helmed by Chef Daniel Chan, who brings with him decades of experience from acclaimed Japanese restaurants including, Tatsu Sushi at Chjjmes, and Akashi. Kakushin is a reflection of his unbridled creativity, balanced only by his precise technical know-how, honed from years of dedication to his craft and passion for Japanese cuisine. Incorporating his penchant for elevating simple ingredients with a playful twist, no detail is overlooked, even in the most basic of preparations. From the Sous Vide Kagoshima Beef Short Rib, which is sous vide for over 30 hours, to the house-made Ponzu and Shoyu sauces that are meticulously fermented for seven days, guests can experience the heartfelt attention to detail that is poured into each and every element.
Featuring only the best and freshest ingredients of the season that are carefully handpicked and flown direct from well-known markets including Toyosu Market, to produce from the most elusive of specialty farms in Japan, the entire Kakushin experience is a breath-taking culinary ode to the land of the rising sun.
The carefully orchestrated Kakushin Omakase journey begins with an enthralling introduction to the treasures of the Sea of Japan. A medley of seasonal appetisers and premium sashimi are prepared with the sole intention of showcasing the natural freshness and distinct flavours of the ocean. Next, an effusive offering of grilled (Yakimono) and steamed (Mushimono) dishes pays tribute to the ethos of centuries-old Japanese culinary philosophies before leading into Kakushin’s signature dish – the Chargrilled A5 Kagoshima Wagyu, Truffle Balsamic Sauce or Chargrilled Kagoshima Pork Belly, Buta Kakuni sauce. The journey continues on an epicurean high with an impressive selection of Nigiri Sushi, handmade to perfection, with each morsel of rice steeped in a house-made brown vinegar to bring out an unequivocal taste of sheer umami. Culinary adventurers are then gently led to a resounding finale with the signature Kakushin Omakase Soup, delicately boiled for hours with the finest of ingredients of the season to produce an otherworldly broth worthy of the most spectacular of finishes. A platter of Japanese premium seasonal fruits and Premium Japanese ice cream await as the sweetest ending to an unforgettable journey for even the most seasoned of gourmands.
The restaurant in itself – the epitome of refined luxury – exuding a sense of intimacy even amidst the hustle and bustle of Scotts Square. Set in a sophisticated 1400-sqft space in the prestigious enclave of Orchard Road, the entire space is enveloped in a luscious palette of black and gold, accented with textures from Italian marble to warm timbre, an elegant homage to distinguished culinary institutions in the heart of Ginza.
