Our intimate sanctuary offers a serene retreat where you can savour the finest ingredients from Japan. We source our fish directly from local fishermen, guaranteeing unmatched freshness and quality without any intermediaries.

    At Hikaru, our Yakimono grilled creations (焼き物) are infused with the essence of tradition and craftsmanship. We use binchotan charcoal, considered the finest charcoal in the world. Its unparalleled ability to burn for hours without smoke or odor allows the true essence of each dish to shine, ensuring a clean, refined flavor that only this exceptional charcoal can deliver.

    Our chef expertly employs the time-honored techniques of dry aging and Kombujime (昆布締め) an integral part of the Edomae sushi tradition. By aging fish with kombu (kelp), the natural umami of each ingredient is heightened, creating a depth of flavor that is both delicate and profound.

    One of our signature dishes is the Signature Rice Bowl, a luxurious medley of Hokkaido sea urchin, ikura, and negitoro. The sweet, briny richness of the sea urchin, the pop of ikura, and the silky smoothness of negitoro come together in perfect harmony, making every bite a memorable experience of balance and sophistication.
