    Chef Ashino masterfully presents an authentic Edomae sushi experience, renowned for his meticulous craftsmanship and unwavering dedication at his namesake, Ashino. Specializing in time-honored techniques like aging and curing, he skillfully enhances the inherent flavours of the fish. Sourcing seafood directly from Japan, his omakase menu is a testament to the seasons, featuring the finest ingredients available.

    Chef Ashino's attention to detail extends to the sushi rice, using premium Koshihikari and Nanatsuboshi varieties. He meticulously washes the rice with water from Mount Fuji, ensuring unparalleled quality and a clean, pure flavour. Cooked in a traditional Nanbu Tetsu iron kettle, the rice achieves the perfect texture, thanks to the kettle's superior heat retention and distribution.
    Moreover, Chef Ashino finely tunes the temperature of the rice for each sushi piece, customizing it to complement the specific seafood. This refined technique amplifies the natural flavours and textures, resulting in a rich, layered dining experience.

    Next, innovation meets tradition with the shinkei Jime technique, a method that enhances the fish's freshness by immediately severing the nerves post-catch. This, coupled with his aging and curing expertise, unlocks the seafood's natural umami, adding depth to each dish.
