    Staff ignore the reservation and did not allow me to seated at the time I booked. It's wasted of my time. Terrible!!!!!

    Description

    The founder, Nobukatsu Shibuva, introduced several innovations when starting the restaurant in Ginza.

    These include the "Hitokuchi Katsu"(Bite-sized Cutlet), which featured fillet cutlets cut into small pieces rather than being fried as one whole piece, and a unique "Chuno Sauce"(Medium-thick Tonkatsu Sauce), which he developed as an improvement over conventional sauces to better complement tonkatsu.

    For the Katsudon (cutlet rice bowl) sauce, he created a special broth not from the typical bonito stock, but from pork and onion, laying the foundation for the Ginza Bairin of today.
