      NILA presents a culinary homage to India's maritime trading heritage, blending coastal and river port region flavours with a modern culinary twist. Inspired by the vibrant history of Goa and the Malabar coast, the menu features fresh seafood recipes enriched by the Portuguese influence, celebrating the cultural interplay along India’s eastern shores, including the Bay of Bengal. The interior reflects the azure hues of the coast, complemented by the vivid colours and textures of traditional Indian and Portuguese designs, embodying the spirit of the merchant adventurers who traded spices and cultural artefacts across these waters.

      Executive Chef Bharath S. Bhat, with a rich career spanning prestigious kitchens from Dubai to Mauritius, leads NILA's culinary team. Known for being the first Indian to win Iron Chef Thailand, Chef Bharath's expertise promises a dining experience that transcends traditional boundaries, offering specialities like saar—a zesty grilled and smoked red chilli soup with prawn salad—and peri-peri marinated prawns. The restaurant's decor features a stunning stained glass mosaic bar, reminiscent of Goan churches, and offers an exquisite selection of wines and spirits that complement the rich, spicy flavours of the dishes.​
