Channeling aspects of both Japanese wabi-sabi and California high desert aesthetic, Golden State presents a new type of Japanese-California fusion cuisine. Traditional Japanese shapes and tastes combine with the heat and color of new California cooking. Classic Japanese bites here range from simple-yet-beautiful nigiri, temari, and hand roll sushi to full-on maki rolls on plates overflowing with color and flavor. Inside-out rolls such as the Dragon Roll, Spider Roll, Citrus Roll and High Desert Roll are creative fusions of flavor unlike anything you've seen before. Beautifully-plated nigiri such as tuna maguro, scallop hotate, and eel unagi are almost too perfect to eat.

Golden State’s California menu is a fresh taste of the coast. Fish tacos, crab cakes, lobster rolls and seafood burgers all taste straight from the Malibu pier, with locally-grown Mexican peppers bringing the heat. Unique craft cocktails deliver a new mix of strong, spicy and sweet. The California Sour, Yuzu Saketini and Spicy Padron margarita are all must-try. The space is airy yet intimate, with soft lights that begin to glow as day turns to night. Antique wood and handmade ceramic tile from the north of Thailand are repurposed to give the restaurant a beautifully aged feel. Neon light placed sparingly around the bar lends an air of psychedelia. All elements combine to make Golden State the ultimate fusion of cool Japanese craftsmanship and warm California sunshine
