    Description

    Waatu is a relaxed eatery in Uluwatu by Award Winning Australian Chef James Viles and Chef Andy Photiou, inspired by local ingredients from the Indonesian archipelago cooked over coals.

    With no gas and no electricity used to cook, Waatu is wholly driven by coals to produce some of the most layered tastes from ingredients. Using the most primitive cooking method - over coals - Waatu’s food and drinks are painstakingly conceptualised and brought to life.

    Waatu’s cocktail & zero alcohol menu is a canvas of creativity, with imagination being the only limit. Must try is baraa, a smoked concoction apropos of the concept. The mischievous mega mendung, a conception of gin neptunia + dry vermouth + yuzu + ponzu. And daluman, an Indonesian street treat made up of grass jelly and coconut milk, reconceived as a cocktail.
