Executive Sous Chef Aaron Tan unveils a collection 13 delicately crafted signature dishes at Man Fu Yuan, a stalwart in the Cantonese fine dining scene in Singapore.
Chef Aaron’s menu creation and service styles are characterised by ingenuity in culinary concepts and contemporary food presentation, with each being the result of intensive research and conceptualising while maintaining the integrity of the brand of Cantonese cuisine that Man Fu Yuan stands for.
He recommends the Roma tomatoes, crab meat, ikura with yuzu dressing which sits on a basket of dramatic tea-infused smoke, displayed to symbolise “floating clouds” when served. Despite the unconventional presentation, the original flavour and texture of the tomatoes and seafood remain a highlight of this visually appealing dish.
Another highlight is the slow-braised pork ribs served with steamed mantou. The sauce is created by slow cooking for 3-hours in an array of Chinese spices, herbs and red glutinuous rice, which works as a natural colour enhancer for the dish. The pork short ribs are then added in and braised for a further 2 hours so achieve the final texture.
Traditions are not forgotten and guests may also order from a selection of perennial Cantonese classics including the new braised three-head abalone, fish maw, black truffle, broccoli, double-boiled premium bird’s nest, almond cream, preserved mandarin orange, Buddha jumps over the wall

"Just months after taking the reins, Executive Sous Chef Aaron Tan has set about introducing 13 new signature dishes of his own creation at Man Fu Yuan, with ingredients like yuzu juice and edible gold leaf.
Chef Tan may just be on to something. There is no denying the visual spectacle of the Roma tomatoes with crab meat, ikura and yuzu dressing. Rising out of a basket of tea-infused smoke, the presentation immediately calls to mind the serenity of a shan shui (a style of Chinese landscape) painting - and its citrusy umami is no less artfully crafted.
Even old fixtures have been given new life under Chef Tan's expert touch. The braised three-head abalone with fish maw and broccoli is accompanied by a trio of black truffled slices, masterfully cut to the point of translucence.
The dish is coated in a thick gravy that Chef Tan says is merely oyster sauce - but when asked about the secret behind its complex fragrance, he responds with a wink and a finger to his lips."-The Straits Times
