Having opened his first restaurant at 19 after working a few years in Southern Italy, you’re in the good hands of Chef Danilo at Bellini. The Bellini name has become synonymous with delicious, fresh, and unpretentious traditional Italian fare that diners can count on for exceptional quality and taste.
The spotlight undoubtedly belongs to the pizza due to Chef Danilo’s skills which crowned him as a three-time champion at the Pizza World Cup. The Diavola and the Prosciutto are top choices, while the Calzone, an oven-baked folded pizza stuffed with generous heapings of mozzarella cheese, ham, and mushrooms is an interesting choice for those who’re looking for something different.
The pizza’s only an exciting glimpse into the Bellini culinary adventure though. Pasta here is stripped to its basics, allowing the homemade pasta, the fresh ingredients, and the chef’s mastery to shine. The Cavatelli Norma, where cavatelli is tossed in a refreshing tomato-based sauce and served with perfectly grilled eggplant, proves to be a fine example. Risotto, on the other hand, takes on fancier forms, such as the Risotto Ai Frutti Di Mare, which takes advantage of Phuket’s fresh seafood, the decadent Risotto Ai Quattro Formaggi, or the Risotto Tom Yum Goong, a nod to Thailand’s favourite dish. Bellini makes great use of Phuket’s abundance of fresh seafood with two standout dishes: black mussels in spicy tomato sauce and seared scallop with white bean cream sauce. The mussels were cooked so well they were falling out of their shells, and were light with a small kick. -The Phuket News
