Discover prized French black truffles, also known as the ‘Diamonds of Périgord’, available in December at Scarlett Café & Wine Bar. Harvested only between November to March each year, Scarlett brings these rare winter black truffles from Périgord, part of the southwestern Dordogne region in France. The truffle mushroom is special because they cannot be planted or grown commercially, and can only be found by specially trained dogs and pigs. Truffles grow beneath the surface of the soil among the roots of specific types of trees, creating symbiotic relationship with those trees.

"The tartare was a very good version, if a bit heavy on the mustard. The meat had been hand-minced so it had plenty of texture, and the fries served on the side were excellent. The bone marrow was fantastic, and a great deal for three large bones. The marrow's rich unctuousness went well with the accompanying pickled shallots and the sharp vinaigrette on the salad." -SCMP
